How to prepare
THeat oil in a pan on medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn golden brown. Add ginger paste and garlic paste and sauté for a minute. Add chopped tomatoes and green chilies. Mix well and cook until the tomatoes are soft and mushy. Add coriander powder, cumin powder, garam masala powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes. Add the mixed vegetables and sauté for 5-6 minutes until the vegetables are slightly tender. Cover the pan and cook the vegetables for another 2-3 minutes on low heat until they are cooked through. Garnish with fresh coriander leaves and serve hot with naan, roti or rice. Your Vegetable Jalfrezi is ready to be served. Enjoy!
